Prova Spirits

Prova Spirits is a small cocktail-focused distillery and bar in Louisville, Kentucky, founded by Giuseppe Paoulos and Saniya Sami. The company opened to the public in August 2025 and operates from 917 East Liberty Street, near Louisville’s NuLu district.

Paoulos comes from an Italian-American family, and the company draws much of its inspiration from Italian aperitivo and amaro traditions. Prova describes itself as a “cocktail-driven nano-distillery,” with spirits and liqueurs produced on site specifically for both bottling and use in the bar’s cocktail program.

Its range includes amari, vermouth and other aromatized wines, limoncello and other liqueurs, gin, vodka, aquavit and rum. In March 2026, Prova Spirits joined the Kentucky Distillers’ Association.
