Prova Aquavit is an American aquavit produced by Prova Spirits in Louisville, Kentucky. It is bottled at 45% ABV.
The spirit is distilled with dill and caraway as its principal botanicals. Prova Spirits describes its production as following a similar approach to the distillery’s gin, while shifting the botanical focus away from the citrus-forward profile of the gin toward dill and caraway.
Prova Aquavit is also used in the cocktail program at Bar Prova. It has appeared in drinks including the Trident, made with aquavit, amaro, sherry and lacto-fermented plum bitters; an Aquavit Old Fashioned with rye whiskey, maple syrup and bitters; and the Eternal Thompson Gunner with aquavit, fermented tomato, lime, celery foam and horseradish. Another cocktail, Strawberry Jam, combined Prova Aquavit with Amaro Arancello, strawberry oleo and aquafaba.
The aquavit has also been used by other Louisville bars. SEVEN Cocktails + Bourbon has listed Dexter’s Laboratory, a cocktail prepared with kimchi-infused Prova Aquavit, Midori, Brucato Woodlands Amaro, lemon, honey syrup, celery bitters and Jamaican bitters.

Prova Spirits is a small cocktail-focused distillery and bar in Louisville, Kentucky, founded by Giuseppe Paoulos and Saniya Sami. The company opened to the public in August 2025 and operates from 917 East Liberty Street, near Louisville’s NuLu district.
Paoulos comes from an Italian-American family, and the company draws much of its inspiration from Italian aperitivo and amaro traditions. Prova describes itself as a “cocktail-driven nano-distillery,” with spirits and liqueurs produced on site specifically for both bottling and use in the bar’s cocktail program.
Its range includes amari, vermouth and other aromatized wines, limoncello and other liqueurs, gin, vodka, aquavit and rum. In March 2026, Prova Spirits joined the Kentucky Distillers’ Association.
