Banana Bread Aquavit is a limited-edition aquavit produced by ISCO Spirits in Providence, Rhode Island. The spirit begins with an organic corn neutral base distilled with caraway, which provides the aquavit’s principal Scandinavian botanical character.
After distillation, ISCO infuses the spirit with banana bread made by Rhode Island’s Borealis Coffee Company. The bread itself contains flour, bananas, eggs, butter, sugar, milk chocolate and the usual baking ingredients. The distillery separately roasts ripe bananas, including their peels, and adds them to the spirit to build a more concentrated caramelized banana character. After the infusion stage, the aquavit is filtered and bottled at 40% ABV in 375 ml bottles.
Banana Bread Aquavit was released on January 22, 2026, during ISCO’s third annual Winter Blues Be Gone event in Providence. The distillery presented the new aquavit there alongside Nordic-themed food and activities. Contemporary trade coverage described the release as being made with Borealis banana bread and sold through the distillery’s tasting room.

ISCO Spirits, formally The Industrious Spirit Company, operates in Providence, Rhode Island, where it opened its distillery in 2020. The company was co-founded by Manya Rubinstein, Dan Neff, Doug Randall and John Curtin. Its Providence facility occupies part of a former industrial mill complex associated historically with Providence Steel and Iron Company.
ISCO produces its spirits on site, carrying out mashing, fermentation, distillation, bottling and packaging at the Providence facility. The company has emphasized organic and regeneratively farmed grains and has developed a broad range including vodka, gin, bourbon, aquavit and experimental specialty spirits.
Aquavit forms both a regular and experimental part of the range. ISCO’s standard Fresh Dill Aquavit is a caraway-forward spirit made with dill, while limited releases have extended the category into unconventional recipes such as Everything Bagel Aquavit and Banana Bread Aquavit. The latter retains caraway as its defining aquavit botanical but combines it with a corn-based spirit, actual banana bread and roasted bananas.
