Everything Bagel Aquavit is a limited-edition aquavit produced by ISCO Spirits in Providence, Rhode Island. Created as a savory interpretation of caraway-focused aquavit, it is designed to reproduce the flavor profile of an everything bagel. The spirit is made from an organic wheat base and seasoned with a custom spice blend developed with Rhode Island’s Ocean State Pepper Company. The documented ingredients include onion, garlic, poppy seed, citrus, salt and a substantial amount of caraway. It is bottled at 40% ABV in 375 ml bottles.
ISCO describes the aroma as showing toasted sesame and roasted garlic, with subtler celery and onion notes. Its producer tasting notes describe bagel spices on the palate alongside lemon zest and a mild nutty character, leading to a savory finish. The distillery recommends serving the aquavit over ice with a small amount of tomato water, in a Bloody Mary, or in a spritz with sweetened lemon juice and sparkling water or tonic. It also publishes a cocktail combining the aquavit with Campari, elderflower liqueur and orange bitters.
Everything Bagel Aquavit was released in January 2025, with ISCO presenting it at its Winter-Blues-Be-Gone Party in Providence on January 23. Contemporary trade coverage described it as the distillery’s latest spirit at the time. ISCO currently classifies it as a limited-release, distillery-only bottling.

ISCO Spirits

ISCO Spirits, formally The Industrious Spirit Company, operates in Providence, Rhode Island, where it opened its distillery in 2020. The company was co-founded by Manya Rubinstein, Dan Neff, Doug Randall and John Curtin. Its Providence facility occupies part of a former industrial mill complex associated historically with Providence Steel and Iron Company.
ISCO produces its spirits on site, carrying out mashing, fermentation, distillation, bottling and packaging at the Providence facility. The company has emphasized organic and regeneratively farmed grains and has developed a broad range including vodka, gin, bourbon, aquavit and experimental specialty spirits.
Aquavit forms both a regular and experimental part of the range. ISCO’s standard Fresh Dill Aquavit is a caraway-forward spirit made with dill, while limited releases have extended the category into unconventional recipes such as Everything Bagel Aquavit and Banana Bread Aquavit. The latter retains caraway as its defining aquavit botanical but combines it with a corn-based spirit, actual banana bread and roasted bananas.
