Maison Sivo

Maison Sivo is a microdistillery and ecological farm located in Franklin, in Quebec’s Montérégie region. The distillery was founded by Janos Sivo, whose family has Hungarian roots.

At the beginning of the 20th century, the Sivo family produced fruit brandies in Hungary. Janos Sivo later brought this family tradition to Quebec and established Maison Sivo.

The distillery works with grains and locally grown fruit. Its production includes whisky, fruit eaux-de-vie, liqueurs and other spirits.

Maison Sivo uses small-batch distillation. An Aroma still is used for fruit-based eaux-de-vie and liqueurs, while grains are milled, fermented and distilled for the whisky production.

The distillery’s farm grows blueberries, raspberries and blackcurrants. Maison Sivo describes the farm as ecological and selects fruit varieties with naturally high sugar content to reduce the need for added sugar.

Maison Sivo is also known for producing Quebec whisky. The distillery produced what it describes as Quebec’s first Single Malt and a true Rye, using Quebec-grown grains and aging the spirits in oak barrels.

The combination of Hungarian family distilling traditions, Quebec agricultural products and small-batch production forms the basis of Maison Sivo’s approach to spirits.
