Distillerie du Viaduc

Distillerie du Viaduc was created by childhood friends Théo Boussion and Quentin de Montgolfier, who had met while attending school in Nantes. During the Covid period they left their previous careers in Paris, spent time working the grape harvest in Beaujolais and subsequently trained in distillation in Brittany before developing their own project. The company was incorporated in late 2021 and the distillery opened to the public on 14 June 2022.

The distillery occupied a 150-square-metre, two-level workshop at 55 Avenue Daumesnil beneath the Viaduc des Arts in Paris’s 12th arrondissement. Production used two traditional copper pot stills, with capacities of 500 litres and 100 litres, handmade in Portugal. The spirits were generally produced through botanical maceration followed by distillation, with natural racking and gentle filtration.

Boussion and de Montgolfier built the range around organic ingredients, using exclusively French botanicals in their recipes, while also experimenting with the recovery and redistillation of surplus or otherwise unusable products from breweries, cider producers, wineries and food businesses. Their permanent range included several gins, aquavit, mint spirit and Pastiche, while collaborations produced additional limited spirits. In 2024, Les Spiritueux du Viaduc received third place in the food-craft category of the City of Paris’s Fabriqué à Paris awards.

The business operated until 2025. Distillerie du Viaduc declared cessation of payments on 12 June 2025, and the Paris Tribunal opened judicial liquidation proceedings on 8 July 2025. The company and its sole establishment at Avenue Daumesnil are now recorded as inactive, although remaining bottles of its spirits, including the aquavit, continue to appear through retailers.
