In 2025, Alpine Distilling and Stein Eriksen Lodge released the second batch of Stein Eriksen 52 Aquavit. The updated edition was announced in May 2025 and continued the collaborative project that began with the limited 2019 series. The aquavit maintained its connection to Norwegian traditions closely associated with Stein Eriksen—an Olympic champion and a longtime representative of Deer Valley, whose name the Stein Eriksen Lodge bears.

The second batch emphasized a grain base made from Utah-grown winter wheat and barley, which served as the foundation for distillation. The flavor profile was shaped by caraway, cardamom, and fennel, while barrel aging contributed a pronounced golden color and an open aromatic character. The producer described the aquavit as suitable for drinking neat, for toasts, and in cocktails, particularly when paired with hearty food.

The second batch was presented at several events, including showcases at Platform by the James Beard Foundation, as well as tastings at Alpine Distilling and Stein Eriksen Lodge. The aquavit was offered to guests alongside cocktail selections and special tasting sets.
