Nordsjön Akvavit

Nordsjön Organic Akvavit was Bluewater Organic Distilling’s aquavit inspired by the Swedish heritage of the company’s founder, John Lundin. According to Bluewater Distilling, Nordsjön was closely tied to the founder’s family traditions: aquavit was often present at gatherings of his Swedish relatives. This cultural connection became the foundation for the product’s creation and stylistic direction.
The base of Nordsjön was the distillery’s organic vodka spirit, distilled on 100% copper stills. Into this spirit they infused a classic trio of aromatics – caraway, aniseed, and orange peel – creating a soft, clean, and well-balanced profile. The distillery emphasized that this aquavit worked equally well in cocktails – such as a cucumber gimlet or a lime-accented French 75 – as well as served ice-cold as a festive shot at celebratory meals.
Notably, the Nordsjön recipe later became the foundation for Bluewater’s rarest and most adventurous aquavit project – Wizard Akvavit, a one-of-a-kind expedition bottling aged aboard the F/V Wizard in the Bering Sea.
By 2018, references to Nordsjön Akvavit begin to disappear from Bluewater Distilling’s Facebook posts, and a new product starts appearing in the feed – Wintersun Aquavit, launched on October 11, 2018 as the first certified organic aquavit in the United States. Both spirits share the same core flavor profile of caraway, aniseed, and orange, which strongly suggests that Wintersun represents a rebranding and further refinement of Bluewater’s earlier Nordsjön expression. While Wintersun became the new face of their Scandinavian-inspired lineup, Nordsjön remains an important part of the brand’s history as Bluewater’s original aquavit and the foundation of its Nordic series.
