Haize Aquavit is a French aquavit produced by Ura Spirits in Biarritz, on the French Basque coast. It is made on a wheat spirit base and bottled at 40% ABV. Its botanicals are caraway seeds, dill seeds and leaves, and lemon zest.
The spirit is made using Ura Spirits’ low-temperature vacuum distillation process. The distillery distills botanicals separately before blending the resulting distillates, and uses mineral water from the Montcalm spring in the Ariège Pyrenees for reduction.
Haize Aquavit received a Gold medal in the Unaged category at the 2022 World Drinks Awards, where it was one of three Gold-winning unaged aquavits that year.
The producer describes its profile around fresh lemon zest, herbaceous dill and the camphor-like character of caraway, followed by candied lemon and a light anise note. The current standard bottle is 50 cl.

Ura Spirits is an artisanal distillery in Biarritz, France. Biarritz is located in the administrative region of Nouvelle-Aquitaine and is also part of the French Basque Country (Pays basque français), a historical and cultural region. The distillery was established in 2019 by Dorian Vincent, who opened it in July of that year and developed its original spirits using low-temperature vacuum distillation.
In June 2025, the distillery business was acquired by Olivier Pézeron and his daughter Laïla Pézeron, an agricultural engineer, who now operate Ura Spirits as a family business. The distillery continues to specialise in vacuum distillation, with botanicals distilled separately at low temperature. Its range includes gin, vodka, aquavit, rum and liqueurs, as well as contract and custom spirit production.
The name Ura means “water” in Basque. The distillery uses mineral water from the Montcalm spring in the Pyrenees for reducing its spirits and works with botanicals sourced largely through certified organic French growers and importers.
