Clara Hof Barrel-Aged Aquavit

Clara Hof Barrel-Aged Aquavit is a sherry-cask-matured aquavit produced in the Norwegian tradition and distilled from a blend of nine organic botanicals. Alongside caraway and anise seed, the recipe includes fennel, coriander, cinnamon bark and porst (bog myrtle), the latter harvested by the producer in Sweden. The distillation requires precise separation of the heart cut to balance the diverse botanicals.
The spirit is aged in an American white oak cask that previously held bourbon and later Pedro Ximénez sherry. This cask sequence imparts additional structure, combining wood influence with characteristic PX notes.
Aromatically, the aquavit shows caraway, light anise and fennel supported by barrel character, with PX-derived tones reminiscent of candied orange and raisins. On the palate, a gentle sweetness from the sherry cask appears alongside the herbal base; the finish reveals a clearer anise note compared to the unaged version, followed by a mix of spice, oak and sherry accents.
The producer recommends drinking it neat at room temperature, as chilling would diminish the complexity of the aromas. It can be served after a substantial meal or enjoyed on its own as a matured, aroma-driven aquavit.
