Heringslake Aquavit

Heringslake Aquavit is a long-standing northern German aquavit produced by the historic Rumhaus Johannsen in Flensburg. Originally created as a tribute to the Kappelner Heringstage, it has since become a year-round regional specialty. The most recent version features a refined recipe built on caraway and anise, now complemented by a subtle dill note that gives the spirit a fresher, more culinary profile.
The recipe update also included an increase in strength to 39% vol., allowing the botanicals to present more clearly on the palate. Heringslake remains a traditional clear aquavit, but the added dill makes it especially suitable alongside fish dishes in addition to classic North German occasions such as Grünkohl meals.
The producer recommends serving it chilled but not ice-cold so that the spice and herbal nuances remain fully perceptible.
