Ole Bjørkevoll Aquavit from Rolling River Spirits is part of a Scandinavian-inspired line created in honor of Ole Bjørkevoll, a Norwegian immigrant who settled in the Pacific Northwest in 1924. At the age of sixteen, he began working in the region’s halibut fishing industry, eventually becoming the owner and captain of the schooner Constitution. The aquavit is dedicated to his legacy and the hardworking fishermen of that era.

The spirit is made using Portland’s naturally pure water sourced from the Bull Run Watershed. Its flavor profile builds on traditional Scandinavian botanicals — caraway, dill, and fennel — interpreted with a local Portland touch. The result is a smooth, lightly spiced aquavit with a balanced, savory finish.

Ole Bjørkevoll Aquavit has received multiple awards, including Triple Gold, Best in Show, and Bronze. It can be enjoyed neat or chilled and pairs well with a variety of foods or festive occasions.
