Øster Vit Aquavit was produced by James River Distillery as a version of a traditional Scandinavian spirit. The distillery incorporated oyster shells into the steeping process, combining an established aquavit style with a regional approach.

For this aquavit, James River Distillery first crafted a triple-distilled spirit. Caraway, fennel, and orange peel were used, and several pounds of oyster shells were steeped in the distillate for 48 hours before a final distillation. The ratio of oyster shells was reported as approximately ten shells per gallon. The distillery described the spirit as suitable for serving ice-cold or for use in cocktails.

The aquavit was presented as having a range of aromas, including notes compared to bracken, moss water, sea shells, sea air, dill, fennel, and lemon, with flavors described as including fennel, caraway, white pepper, mint, and vanilla, followed by an herbal and mint finish. Øster Vit was used in various cocktail applications, including substitutions for gin or vodka in existing recipes. It was also served at the distillery with specific cocktail mixes such as Texas Beach Bloody Mary mix.

The product was showcased at events such as the Virginia Spirits Festival, and James River Distillery indicated collaborations with local restaurants and bars in connection with its production. Øster Vit was available at Virginia ABC stores and through direct purchase from the distillery during its period of release.

Øster Vit Aquavit is no longer produced, as James River Distillery announced its closure in late June 2022, ending nine years of operation.
