Hunnbloom Aquavit is a modern German aquavit that deliberately reduces traditional Kümmel (caraway) intensity in favor of a broader spice profile. The producer emphasizes softer caraway notes so that other botanicals—most notably clove, which brings a natural sweetness—can come forward.
The aquavit received a Bronze Award at the Craft Spirits Awards 2024, highlighting its contemporary interpretation of the Nordic style.

Hunnbloom Destillerie is a small craft distillery founded by Ulrich Bultmann, a trained distiller who completed his professional apprenticeship in 2015. In December 2019, he established Hunnbloom UG and opened his own distillery in Bad Segeberg, Schleswig-Holstein.
Ulrich’s work focuses on creating distinctive flavor profiles by combining carefully selected botanicals into harmonious spirits. Seasonal and regional ingredients play a central role in his recipes, reflecting a strong connection to local nature and craftsmanship.
All spirits — including gins, aquavits, clear distillates, liqueurs, and barrel-aged specialties — are produced entirely by hand on site, in the distillery’s own production room located directly behind the shop.
