Experimental Single Batch 023 Aquavit

Released in February 2022, Batch 023 is Chattanooga Whiskey’s interpretation of a Scandinavian-style aquavit, produced within their Experimental Single Batch Series. The spirit begins with the distillery’s unaged rye malt whiskey base, made from a mash bill of malted rye, yellow corn, caramel malted rye, and chocolate malted rye.
It is redistilled with a complex botanical mix including caraway, star anise, dill seed, coriander, juniper, lemon peel, green anise, orris root, cumin, and angelica. After distillation, the aquavit is finished for 6 months in two types of cooperage: Chattanooga Whiskey Rye Malt Whiskey casks (53 gallons) and Pedro Ximénez sherry casks (250 liters).
Bottled at 88 proof (44% ABV), the finished spirit combines sweet, spicy, and savory elements, offering tasting notes of deli rye bread, black currant, licorice root, and candied citrus. It was positioned as both a food-friendly aquavit—ideal with cured seafood—and a flavorful post-meal digestif.
Batch 023 was available exclusively at the Chattanooga Whiskey Experimental Distillery beginning February 25, 2022.
