Aquavit Bremer Kööm is produced and bottled by Piekfeine Brände in Bremen’s Überseestadt district. The distillery was founded in 2011 by Birgitta Schulze van Loon, who developed this regional aquavit together with the Bremen wine and spirits house Julius Kalbhenn. The product was introduced in January 2021 and has since become one of the notable items of the range.
The recipe uses eleven botanicals, combining elements typical of Scandinavian aquavit with ingredients associated with northern Germany. Caraway and dill form the traditional base, while other components include bitter and sweet orange, coriander, fennel, anise, clove and cinnamon. A characteristic feature is the addition of curly kale, which is closely linked to Bremen and contributes to the regional identity of the spirit.
Production begins with maceration in high-purity neutral alcohol at 96.3%. After the botanicals have infused, the mixture is redistilled slowly in a 130-litre copper pot still. The resulting distillate is then aged for three months in a freshly emptied red wine barrel from the Klumpp winery in Baden, giving the spirit a copper-gold colour and rounding out the herbal notes. The aquavit is filtered over activated charcoal before bottling, and only water is used to bring it to bottling strength, with no added flavourings or sugar.
Aquavit Bremer Kööm can be served chilled or at room temperature and may also be used in simple mixed drinks.
