Schloss-Aquavit is produced at the Insel-Destillerie located at Wasserschloss Mellenthin. The base of the spirit is a distillate made from caraway and dill seeds, refined with a selection of additional herbs.

Fresh lemon peels are distilled in the alcoholic steam, adding a fruity component to the aroma and flavor.

After distillation, the aquavit is aged in an oak cask. According to the producer, the cask is taken around the castle moat several times.
