In December 2022, Port Chilkoot Distillery (Haines, Alaska) released a limited-edition aquavit created specifically for their winter solstice celebration. The spirit was available exclusively in the distillery tasting room and sold only on-site.

The aquavit was crafted with a distinctly Nordic botanical profile built around caraway and dill, which form the traditional Scandinavian foundation. To enhance its complexity and brightness, the distillery added coriander, fennel seed, and citrus peel, resulting in a layered and aromatic character. This combination created a bright, complex, herbaceous flavor profile described by the distillery as a perfect winter treat.

The official release took place on December 21, 2022, during Port Chilkoot’s Solstice celebration, where guests could taste the new aquavit and enjoy a Nordic-inspired dinner menu featuring Swedish meatballs, pressed pickled cucumbers, mashed potatoes, herb-glazed carrots, and cardamom–pistachio bread pudding.

During the release period, the distillery also featured cocktails with the new spirit, such as Norwegian Coffee, made with aquavit, espresso, cream, and orgeat, served warm.

Port Chilkoot has not announced any further batches since December 2022, so this aquavit remains a single-run, limited release.
