Svöl Danish-Style Aged Aquavit is a single-barrel aged expression of the brand’s caraway-forward Danish-style aquavit, produced at New York Distilling Co. in Brooklyn, New York.
The spirit is matured for three years in American oak casks previously used for rye whiskey. By January 2025, Svöl was publicly presenting the Danish and Swedish aged aquavits together as exclusive single-barrel releases, while a March 2025 post specifically described the Danish version as a single-barrel aged release.
The Danish expression is bottled at 43% ABV in a 750 ml format. Svöl describes the ageing as developing deeper caraway spice together with warm oak and dried-fruit character.

About the producer
New York Distilling Co.
Brooklyn, New York, United States
New York Distilling Co. is a Brooklyn distillery founded in 2011 by Allen Katz and Tom Potter. The company became known primarily for gin and rye whiskey and also served as the documented production and distillation partner for Svöl Aquavit.
Svöl was developed with the involvement of Peter Nevenglosky, Icelandic chef Gunnar Gíslason, Jonas Andersen, and Allen Katz and the New York Distilling Co. team. The development process reportedly lasted around three years and involved experimentation with more than 50 botanicals and numerous distillation trials before the range was launched commercially in 2019.
Production of Svöl took place in Brooklyn on a 1,000-litre copper still. New York Distilling Co. was responsible for the distillation process and botanical extraction methods used for the aquavit.
Svöl forms part of the Drifter Spirits portfolio, with Drifter representing the brand in the United States, while the U.S. SVÖL trademark is registered to Svol LLC.
New York Distilling Co. moved its production from Williamsburg to Bushwick in 2024. In May 2025, the distillery was acquired by Scotland’s Loch Lomond Group, with founders Allen Katz and Tom Potter remaining involved in the business.
