AQUA VITAE HAMMONIA is an aquavit produced by Spirit of Hafencity, a small craft distillery based in Hamburg’s HafenCity district in northern Germany. The spirit reflects regional traditions, where herbal and spice-forward distillates have long been part of the local drinking culture.
The aquavit is slowly distilled from selected botanicals, primarily fennel, caraway, and anise. A subtle touch of lemon adds a light citrus note that balances the spice profile. All steps of production are carried out by hand, from preparing the ingredients to bottling.
After distillation, AQUA VITAE HAMMONIA matures for several weeks on roasted oak wood. This short but expressive resting period gives the aquavit a deeper aroma structure and a smoother texture while preserving its classic North German character.
The aquavit can be enjoyed neat at room temperature or in a chilled glass to highlight its herbal and woody nuances. A contemporary alternative is the “HafenCity Libre”: mix the aquavit with cola in a 1:4 ratio, add ice, lime, and a touch of mint. This preparation offers a modern interpretation that suits the urban identity of Hamburg’s HafenCity.
